Our guests love organic vine
When Wolfgang Schmallegger started growing wine for the sheer joy of it in the late 80s, it was just a nice sideline. But one mountain wasn’t enough! So in 1995, the brave dared to take an unusual step for the time: he was the first winemaker in the region to convert his business to certified organic farming.

Doing without pesticides does not make viticulture easier. But it does make it better. Because only then can you taste in every glass how much patience, love and respect for the vines went into it. What father Sali began over 25 years ago, son Lukas has been continuing since 2020. And he is working on his first own creations.
...and our cuisine chef loves zero-waste
As a father, Jürgen is passionate about a future that is fit for his grandchildren. He wants to be part of the solution and waste as little as possible. Food deserves more appreciation. Meat is not a mass product – animal welfare and whole animal processing are a matter of course for him.
ZERO WASTE IS NOT NEW
Our grandparents recycled everything. Leftovers are valuable. One example: In the Pöllauer Valley we love deer pears. They are processed into juice, chutney or bread. At RETTER BioGut, we practice zero-waste. Acting consciously means conserving resources. Nature knows no waste – we should learn from it.
