In the Pöllauer Tal Nature Park, the RETTER BioGut is used to grow the Pöllauer Hirschbirne, an almost forgotten pear variety. In harmony with nature, our natural fruit trees thrive in orchard meadows, which, as biotopes rich in species, play an important role in the ecological balance.
Harvested when fully ripe, the Hirschbirne develops its special flavour, which ranges from tart and sweet to malty and nutty. In the culinary ‘Ark of Taste’ of Slow Food Austria, the Pöllauer Hirschbirne is an ambassador for regional food culture.
At RETTER’s BioGut, we refine the hand-picked pears into regional delicacies: from refreshing pear juice to nougat deer pear juice chocolate. For our head chef Jürgen, the deer pear is the creative touch. His Slow Food creations in 100% organic cuisine have been awarded a toque by Gault-Millau.

It is small, inconspicuous – and yet a true queen among fruits: the Pöllauer Hirschbirne pear brings the taste of nature to the plate and is the centrepiece of a culinary journey that combines pleasure, health and sustainability in the most beautiful way.
Rediscovered in the Pöllau Valley over 30 years ago and now awarded a protected designation of origin, it is the centrepiece of the Slow Food cuisine at the RETTER Bio-Natur-Resort. With its unique flavour – sweet and fruity, delicately caramelised and subtly spicy – it is not only a delight for gourmets, but also provides real added value for body and mind thanks to its polyphenols.
In our award-winning organic cuisine, the Hirschbirne is the star of the show: with ingredients from our own farm, innovatively interpreted recipes and a clear commitment to genuine regionality.

The Hirschbirne pear is rich in phytochemicals in the form of polyphenols and valuable dietary fibres. These plant substances increase the proportion of microorganisms in our body’s own microbiome. The higher this proportion, the more effectively we keep our life processes going. We stay healthy and productive, think clearly and are in a good mood.
